Turkey Cabbage

Low carb, no added salt or sugar! One of my family’s favorite quick meals.  Also, try placing it on top of riced cauliflower or any other vegetable favorite.

Turkey Cabbage

A quick go-to recipe that combines a lean protein and a vegetable.

Equipment

  • 1 large skillet or wok with a lid

Ingredients
  

  • 1 pound 98% or 96% lean ground turkey
  • 1 head red or green cabbage chopped about 2-3 inch pieces
  • 1 small sweet onion diced
  • avocado oil spray
  • 1 TBS garlic powder
  • 1 TBS curry powder
  • 2 tsp cumin powder

Instructions
 

  • Spray pan with Avocado spray oil (or just lightly coat with oil). Cook the ground turkey in the wok or skillet until almost done.
  • Add the onions, cook for about 5 minutes or until onions are beginning to soften.
  • Add the garlic and cumin stirring well. Spread the meat flat in the pan.
  • Add the cabbage on top of the meat. It will be bulky at first, and may even be taller than your pan and that's okay. Add about 1-2 cups of water on top of the cabbage. The amount will depend on the pan size. Cover (even if the lid is sitting on the cabbage) and bring to a simmer.
  • Check it frequently to not run out of water as the cabbage begins to soften and fill the pan. Once it starts to soften, stir the mixture and keep it covered until the cabbage is completely soft.
  • Notes: Add more or less of the seasoning to suit your taste.
